Coconut Chicken Tenders
Ingredients:
2 chicken breasts
1⁄2 c coconut flour
2 eggs
splash of coconut milk (can)
1 c shredded coconut
Directions:
- Preheat oven to 400
- Cut chicken breast into 1” strips
- Put coconut flour, eggs with splash of coconut milk (mix well together), shredded coconut in 3 separate shallow bowls
- Coat each chicken strip in coconut flour, then egg/milk mix, then shredded coconut
- Lay chicken strip on baking sheet
- Cook for 10-12min
