Paleo Eggs Benedict

Breakfast is the most important meal to start your day off right! Here’s one delicious way to get your day kick started!

INGREDIENTS:

  • 12 eggs, poached
  • 6 slices canadian bacon 3 egg yolks
  • 1 tbsp. lemon juice
  • 1⁄2 tsp. salt
  • 1/8 tsp. paprika
  • dash of pepper
  • 4 tbsp. melted coconut oil

DIRECTIONS:

  • Grease + heat pan over med heat
  • Cook canadian bacon
  • Poach eggs
  • Mix hollandaise sauce
  • Sauce: Mix egg yolks, lemon juice, salt, paprika, pepper in blender 10sec 6. Set blender to medium speed, pour coconut oil slowly until thick
  • stack egg + canadian bacon + egg, top with sauce and enjoy!
