Pineapple Caribbean Jerk Chicken

Ingredients 

  •  2 chicken breast 
  • ½ c pineapple, chopped 
  • 2 tbsp. red onion, diced 
  • ¼ tsp. jalapeno, minced 

Sauce: 

  • 2 garlic cloves, minced 
  • 4 tbsp. coconut oil 
  • 2 tbsp. coconut amino 
  • 3 tbsp. honey 
  • 1 tbsp. apple cider vinegar 
  • ½ lime, juiced 
  • 1 tsp. thyme 
  • ¼ tsp. ginger 
  • ¼ cinnamon 
  • 1/8 tsp. cloves, ground 
  • 1/8 tsp. nutmeg

Directions 

  1. Preheat oven to 350 
  2.  Mix all sauce ingredients; keep 4 tbsp for later 
  3.  Form a foil “boat”; add chicken breast and sauce; wrap foil to cover 
  4.  Cook in baking dish for 18-20min 
  5.  When chicken is done, add pineapple, jalapeño, red onion to left over sauce; mix well 
  6.  Add pineapple topping to chicken
