Pineapple Caribbean Jerk Chicken
Ingredients
- 2 chicken breast
- ½ c pineapple, chopped
- 2 tbsp. red onion, diced
- ¼ tsp. jalapeno, minced
Sauce:
- 2 garlic cloves, minced
- 4 tbsp. coconut oil
- 2 tbsp. coconut amino
- 3 tbsp. honey
- 1 tbsp. apple cider vinegar
- ½ lime, juiced
- 1 tsp. thyme
- ¼ tsp. ginger
- ¼ cinnamon
- 1/8 tsp. cloves, ground
- 1/8 tsp. nutmeg
Directions
- Preheat oven to 350
- Mix all sauce ingredients; keep 4 tbsp for later
- Form a foil “boat”; add chicken breast and sauce; wrap foil to cover
- Cook in baking dish for 18-20min
- When chicken is done, add pineapple, jalapeño, red onion to left over sauce; mix well
- Add pineapple topping to chicken
