Salmon with Coconut Cream Sauce Recipe

Salmon with Coconut Cream Sauce:
1 lb. salmon fillet
2 tsp. coconut oil
1 shallot, diced
3 garlic cloves, minced
1⁄2 c coconut milk, can
2 tbsp. basil, chopped
lemon juice, to taste
salt + pepper
-Preheat oven to 350
-Place salmon in shallow baking dish; sprinkle both sides with salt + pepper
-Heat saucepan over medium heat; add coconut oil, garlic + shallots; sauté 3-5min
-Add coconut milk + lemon juice; bring to low boil
-Reduce heat; add basil
-Pour over salmon; bake uncovered for 12-15min
