Sweet potato, Kale and Chicken Soup

Need something to keep you warm! Try out this delicious soup recipe!

Ingredients:

  • 2 chicken breasts, shredded
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1/2 tsp dried oregano
  • 1/2 tsp ground ginger
  • 1 tbsp. garlic powder
  • 6 cups chicken broth
  • 1 large sweet potato, diced
  • 3 cups kale, roughly chopped
  • 1 fresh jalapeno, sliced
  • 1/4 cup fresh cilantro
  • salt and pepper to taste
  • 1 tbsp coconut oil

Prep:

  • Prep all your vegetables
  • Heat a large pot over medium-low heat, add coconut oil, onions and celery and cook 8 to 10 minutes, add garlic and dry spices, cook 2 to 3 minutes.
  • Add chicken broth, chicken, jalapeno and cilantro
  • Cover and cook 20 minutes
  • Add sweet potato and kale, cook until sweet potatoes are tender and chicken is cooked
  • Serve hot! Enjoy!
