Don’t Forget Dessert!
Thanksgiving dinner just isn’t complete without a delicious dessert! Here’s a pumpkin pie recipes to spice up your Thanksgiving evening!
Crust:
- 2 cups almond meal
- 1/8 tsp sea salt
- 1/4 tsp baking soda
- 4 tbsp coconut oil
- 1 tsp cinnamon
- 2 tsp ginger
- 1/3 cup honey
Filling:
- 1/3 cup honey
- 1/2 cup almond meal
- 2 tbsp melted coconut oil
- 2 eggs
- 2 cups pumpkin puree
- 1 cup coconut milk
- 2 tsp vanilla
Prep:
- This will make 2 pies
- Stir honey and coconut oil for the crust in a bowl
- Mix all other crust ingredients in separate bowl
- Combine your 2 crust ingredient bowls together
- Refrigerate 30 minutes
- Grease 2 pie pans
- Split crust into the 2 pans
- Pat down tightly
- Bake at 350 for 8 minutes
- Beat all filling ingredients together
- Pour filling into 2 crusts equally
- Bake at 320 for 1 hour
