Paleo Shepherd’s Pie
One of our members made a delicious paleo shepherds pie over the holidays and who doesn’t love some shepherds pie?! Here’s a great recipe to try out!
INGREDIENTS
Pie:
- 1 lb. ground beef
- 2 carrots chopped
- 2 celery stalks chopped
- 1 small onion chopped
- 2 garlic cloves chopped
- 1 tsp chili powder
- 3 tbsp tomato paste
- 1 tbsp. coconut oil
- 1 cup chicken broth
- 1/4 tsp cinnamon
- salt and pepper to taste
Sweet Potato Topping:
- 2 medium sweet potatoes mashed
- 3 tbsp coconut oil (melted)
- 1 tbsp garlic powder
- salt and pepper to taste
PREP
- Start with making the sweet potato topping – cook sweet potatoes until soft
- Mash until smooth with coconut oil and seasoning
- Preheat oven to 350℉
- Start with cooking the ground beef over medium heat in the coconut oil
- Once beef is partially browned, add chopped carrots, celery, onions, garlic and chicken broth
- Stir in tomato paste and seasonings
- Cook on medium heat until carrots are soft
- Transfer pie filling to a dish and top evenly with sweet potato mash
- Bake for 20-25 minutes
