Chipotle Chicken Lettuce Wraps
Here is a recipe for some healthy and delicious Chipotle Chicken Lettuce wraps from our Fluff to Tuff series 6 week summer body challenge!
Chipotle Chicken Lettuce Wraps
Ingriedients
1 lb. chicken breast
2-3 chipotle peppers, finely diced
3 tbsp. adobo sauce
1⁄2 c cilantro, chopped
1 lime
1⁄2 red bell pepper, diced
3 scallions, thinly sliced
1 head butter lettuce salt + pepper
Directions
- Grease a pan with coconut oil over medium heat
- Season chicken with salt + pepper, sear each side until cooked through let cool, then dice
- Combine cilantro, lime juice, chipotle peppers, adobo sauce
- Add chicken back to pan, with chipotle mix + diced bell pepper, mix until warm
- Serve in lettuce cup, top with scallions
